Fresh Guatemalan coffees have arrived, bringing some previous staples back to the shop. Pachuj-Patzibir is a citrus-forward coffee with structured sweetness and body. Zippy blood orange notes burst to the front, grounded by a sweet malt foundation (think Whoppers candy). This coffee’s creamy, syrupy texture makes me think of munching on honey butter toast. This is one of those comfy cups for any time of day!

Each pound of this coffee was sold at a cost that covered every expense needed for the farmer to break even or profit from their harvest. This eliminates unnecessary risks for the farmer, contributing to a balanced coffee (in more ways than just flavor). Andrés Fahsen, the farmer of this coffee, is the manager of his aunt’s farm, Finca Patzibir, and the owner of his company, Pachuj, located in Atitlán, Guatemala. Since 2017, he has collaborated with Cristy Guirola, owner of Terra Negra Imports, and Junior’s Roasted Coffee in Portland, Oregon. Together they crafted a model called Cost of Production Covered (COPC), an initiative that accounts for farmers’ costs to produce their coffees. This collaboration has existed for 9 years, an indicator of its sustainability. These kinds of projects, which link each portion of the coffee industry – farmer, importer, roaster, and consumer – in an equitable supply chain, are truly unique and kind of revolutionary. I plan to buy as much CoPC coffee as possible in the coming years, and hope you will also!
