We are thrilled to offer this coffee from Apolinar Hernández, a grower from San Pedro el Alto in the Sierra Sur region of southern Oaxaca. This cup is clean, approachable, and balanced. Expect green apple acidity, toffee sweetness, and a hint of rich walnut to round things out – perfect for cozy season.
Apolinar is part of the Union San Pedro growers' association, which brings together farmers from eight communities within San Pedro el Alto. His washed coffees have always performed well in regional blends. This year, Apolinar had a very good harvest, and his continued fertilization with organic compost and compost teas has significantly improved crop nutrition. Apolinar also experimented with both washed and natural lots this year; both yielded great results. This is the washed expression, grown at 1,400 meters in volcanic ash soils with consistent rainfall, resulting in a balanced and expressive coffee.
