A group of family members and neighbors banded together to produce this tasty washed coffee. This iteration features nectarine, lime, and molasses tasting notes.Banda Rebelde is a five-producer community lot from Didier Javier Pajoy (their leader), Elias Pajoy, Erick Pajoy, Albert Caldón, and Daniel Sanchez in La Plata, Huila, grown at 1650-1950 meters.
The name (rebel gang in English) reflects their farming approach – they eschew the National Federation of Colombian Coffee Growers' focus on synthetic, chemical-dependent varieties and instead view their healthy soils as an investment in the future. They collectively make bio-fertilizers, such as Super Magro, using resources from the surrounding environment, bolstering the soil's microbial population and ensuring a resilient local ecology. Shared Source has built a relationship with the Banda Rebelde based on trust, offering interest-free pre-finance loans that allow these producers to pay higher wages to pickers for careful cherry harvesting.
All processing is done on-site. Each producer selects only ripe cherries and floats them in water to remove defects. They ferment whole cherries for 12 hours, then de-pulp and seal the coffee in fermentation barrels with one-way degassing valves for 36-40 hours before washing. The change in coffee mucilage flavor indicates when it's time to wash the beans.
