Brought to you via Cofinet, from the Popayán region in Cauca, Colombia, this decaf is cultivated by smallholder farmers at elevations ranging from 1,500 to 2,070 meters. The beans are gently decaffeinated using ethyl acetate (E.A.), a naturally occurring compound derived from sugarcane. After washing and milling, the beans are steamed to open their pores, then soaked in an E.A. bath where the enzyme attracts and draws out caffeine molecules. Unlike other decaffeination methods, this process preserves the coffee’s natural sweetness and subtle fruitiness! This mixed-variety lot offers a lively, nuanced cup with all the character you’d expect from a high-quality Colombian coffee.
